Courses 2018

During each course you will discover traditional Italian cooking inspired by the Italian passion for high quality, fresh ingredients. This programme perfectly expresses the unique and varied characteristics of Italy through its cuisine. Each course costs £75 per person (payable at time of booking) which includes all ingredients and wines. Recipe cards, aprons and all necessary equipment will be provided. On completion of each course you will receive an attendance certificate. Casa Fellini also offers a loyalty card – once you have attended 6 classes you get the 7th class for free!

Classes are limited to a maximum of 6 to ensure that each person receives personal attention. The classes will be a blend of demonstration and hands-on cooking.

A Taste of Tuscany – 27th January 2018

Tuscany is famous for its stunning scenery, olive groves , vineyards, historic monuments and wonderful art but most importantly for its food, which is simple, classic and exquisite. In Tuscany, they use only the freshest of ingredients cooked in the famous Tuscan olive oil, known as ‘liquid gold’. You will learn local delicacies such as Pappardelle made with duck and the world renowned Tuscan bean soup. So join us and experience your own special ‘Taste of Tuscany”.

Fresh Pasta Making – 10th February 2018

If you love pasta and have always wanted to learn to make your own fresh pasta then this course is perfect. You will be taught how to make fresh egg pasta from scratch. You will roll, cut and stuff. Learn which sauces suit which shapes of pasta. We will concentrate on different flavoured pasta, filled pasta and of course some amazing and sophisticated fillings together with their accompanying sauces.

Pheasant, Venison, Wild Boar and Game Cookery – 24th February 2018
With farmed game more widely available we are seeing renewed interest in game meat. Game is healthy, rich in flavour, low-fat and high protein. Getting the most out of game meat requires special skills, as some cuts are good for quick roasting whilst other cuts of game work better with slow cooking. Whether farmed or hunted learning new ways of enjoying game meat will add a richness to your daily cooking

The Winter Vegetarian – 10th March 2018

If you follow a meat free diet or simply want to learn some new and varied menus to cut down on saturated fats this course will be ideal for you. The Italian diet has a huge variety of meat free meals and we will show you some delicious, hearty and easy to follow recipes to add a new dimension to your eating habits.

Italians are mainly renowned for eating pasta but they do in fact enjoy a lot of soup, mainly in the evening. We will be exploring a range of classic soup recipes from various regions of Italy, such as Passatelli in Brodo, Tuscan Bean Soup, Minestrone with Pesto and many more ……..

A Taste of Amalfi – 14th April 2018 FULLY BOOKED

Amalfi is one of the most beautiful and much loved coastlines of Italy. Living on the coast means that they eat a great deal of fish and shell fish not to mention some delicious pasta dishes. They are also world famous for their lemons. The meal would not of course be complete without a glass of their famous Limoncello.

Risotto, Risotto, Risotto – 28th April 2018
If you are a lover of Risotto but are not confident as to how to prepare one yourself or if you just want to improve you skills then this is the course for you. We will also explore a range of different flavours and styles of preparing a variety of Italian classic rice dishes.

The Easy Italian – 19th May 2018

It is sometimes hard to cook a good family meal after a long day at work so we will be learning some quick, easy, healthy recipes full of flavour and colour such as you would expect to eat in any Italian family home. We will also learn to build a basic store cupboard from which to whip up tasty meals without the need for an extra trip to the supermarket.

Dinner Party Masterclass – 7th July 2018

Hosting a dinner party can be quite stressful. At Casa Fellini you will learn a complete Italian dinner menu – comprising five courses which will include Antipasto, Risotto or Pasta, Fish, Main course and Dessert. If you love entertaining family and friends then this course will give you a new insight into how the Italians entertain at home.

Azure Coastlines – Sicily and Sardinia – 21st July 2018

Both of these islands are possessed of magnificent coastlines and azure waters so there is no shortage of truly fresh succulent fish and shellfish. They also have their own individual ways of cooking them. So join us to explore the recipes of these two incredible islands which could include Spaghetti with Lobster, Mediterranean fish soup and stuffed squid.

If you follow a meat free diet or simply want to learn some new and varied menus this course will be ideal for you. The Italian diet has a huge variety of meat free meals and we will show you some delicious, light and easy to follow recipes using fresh seasonal summer produce to add a new dimension to your eating habits.

Italian Bread Making – 8th September 2018

During this course you will learn to make a variety of classic Italian “breads” such as Ciabatta, Foccacia, Grissini, Piadina and Pizza. Once you have tasted the home made varieties you will never go back to the shop bought variety

A Taste of Piemont – 22nd September 2018 – FULLY BOOKED

Piemonte is in the North West are of Italy bordering with France and Austria and has been of strategic importance since the time of the ancient Romans. Home to a magnificent mountain range and quite a cold climate in the winter. Their style of cooking is vastly different from that of the more southern areas of Italy but none the less delicious.

Autumn Abundance – a celebration – 3rd November 2018

Easy Autumn suppers – Autumn is a plentiful time for Mushrooms, Truffles, Chestnuts and Walnuts. Deeply flavoursome winter vegetables, and Brasica. It is also the season for eating game meat such as pheasant, rabbit and pigeon. Use wild boar to make a rich pasta sauce or try your hand at a venison casserole.

A Taste of Venice – 17th November 2018 – FULLY BOOKED

Venice is one of the most sophisticated cities in Italy with a very long tradition of fine dining and famous as the birth place of the Carnival. Being on the spice route they have been using exotic spices for centuries and are also famous for their sea food recipes. One that they are particularly proud of is their squid ink risotto. They also have a tradition of serving Chiccetti (similar to Spanish tapas) originally available as street food during the Carnival but now served as a canape or appetiser.

Desserts & Prosecco – 1st December 2018

If you have a sweet tooth then this ever popular course is for you! You will learn a mouth watering variety of classic and innovative Italian desserts and then sample them with a glass or two of Italian Prosecco!! Book early for this very popular class.

Italian Street Food – 15th December 2018

Every Italian region has its own street food specialities which are freshly cooked quick & tasty, giving a new meaning to ‘fast food’.  This course introduces you to a variety of ‘moreish‘ dishes such as ‘Torta Fritta (Emilia-Romagna), Panzarotti (small bite-sized calzone, from Puglia), Arancini (small Sicilian rice balls filled with cheese/ragu), Rustici (filled pastry squares, from Campania) as well as some desserts such as Struffoli di San Gennaro and Frappe..  Enjoy what you have made with a glass of wine. These recipes can also be used for canapes, a finger buffet or for Christmas drinks parties.
